Easy Beef Roast Stuffed Peppers

There have been many times I have come home and wanted something simple to make for dinner. One day I looked in my fridge and saw leftover roast, some bell peppers and mushrooms. It was then that I came up with this Stuffed Peppers recipe.

Though, it was just something off the top of my head, It turned out better then I thought it would. In fact it was so good, I had to share it with all of my wonderful readers.

 5 Bell Pepper
 1 cup Diced Mushrooms
 2 cups Brown Wild Rice
 2 cups Roast Beef
 1 cup Mozzarella Cheese- Shredded

Make up your roast with seasonings you enjoy. You can also use sausage, or ground beef.
Make up your wild rice, this can be any type you would like. I used the 90 second Uncle Ben's Wild Brown Rice

Preheat your oven to 350 degrees F

Take one bell pepper and dice into small pieces, put into a small bowl
Dice 5-8 Mushrooms into small pieces then add to bowl
Combine the Mushrooms, Diced peppers, Beef Roast and Rice in bowl Mix well

Cut the tops off of your 4 peppers and clean them.
Spoon mixture into into the peppers filling them half way,
Sprinkle mozzarella cheese over mixture,
Add another layer of the mixture topping with another layer of Mozzarella cheese

Bake in oven for 20 minutes

You can substitute the roast with ground beef, shredded chicken or pork

*Total cooking time varies depending on what meat and rice option you choose.
